Going Wild with Tofu!

I have been on a healthfood kick lately and we have been experimenting with an almost entirely vegetarian diet (not vegan we like eggs, fish and some dairy).

Here are my favorite Tofu Recipes (adapted from The Giant Book of Tofu by K. Lee Evans & Chris Rankin)

Tofu "Meat" Substitute

Drain and press one package of Extra Firm Tofu

Cut into cubes or steaks

Freeze overnight

Microwave frozen Tofu for 2 minutes

Add marinade of your choice (we like pad thai or peanut thai, but you can do just about anything including barbeque with a little liquid smoke)

Fry, Stir-fry, BBQ, Bake

Enjoy!


My other favorite tofu recipe:

Tofu "Egg" Salad
(I could eat this everyday!)
Drain and press half a package of firm tofu
Add 1/2 teaspoon of paprika, 1/2 teaspoon of Curry, 1/8 teaspoon of garlic salt and grind pepper to taste
Smash tofu with fork and mix in seasonings
Add 2 tablespoons of light (I use Hellmann's) mayonnaise
Mix well

Spread it on toast! My husband likes to add some extra mayo to his toast before adding the "egg" salad. It is a great filling lunch and I serve it to my whole family with some organic veggie/potato sticks.

That's it for now. I have also recently made a pretty tasty rhubarb pie with my now perfected whole-wheat crust (I use white whole wheat and roll a little thinner). It was a hit at Erik's work. I now only allow myself one piece of pie since my waistline is suffering.
